Method: 1. Wash & pat dry the salmon belly with kitchen paper
2. Cut the skin off slowly.
3. Cut the salmon belly into thin slices.
4. Mixed well the salmon belly(including the skin) with generous amount of yellow mustard. Sprinkle some oregano & mix well.
5. Put in the fridge to marinate for about 15 mins.
6. Pour some olive oil on the salmon marinates, mixing it well.
7. Place the Salmon belly into the conventional oven. Put on low heat grill for about 6 mins or when the salmon turns slightly browned on the surface.
8. Serve hot with a baked tomato with low fat cheese. (The tomato & cheese to be cooked till the cheese turns melty.)
You can choose a different side to go along example: sauteed mushroom. Stri fry the mushrooms for a while then add the soya sauce & water. Cooked till gravy thickens. Or stri fried broccoli with vegetarian oyster sauce(low salt) adding some water & stri fry till broccoli is cooked.
